Everything But the Kitchen Sink Soup

A lot of times when I go grocery shopping I get a bit over zealous and buy too many vegetables. I always have great intentions to use them in recipes but sometimes life gets in the way.  I hate to throw out food so that isn’t an option. I got inspired by Tara Stiles and Laura Miller of Sidesaddle Kitchen and decided to make a soup.

Mine consisted of the following:

  • tomatoes
  • red bell peppers
  • hot pepper
  • onions
  • broccoli
  • squash
  • garlic
  • mushrooms
  • spinach
  • sea salt
  • ginger
  • cayenne pepper
  • vegetable broth
  • sweet potato (you can roast them first or cut them into cubes and cook with the soup)

Make sure you have large enough pot, add some olive oil.
First, I added the onions and garlic to sauteed. Next was the vegetable broth. Then everything else. I cooked it until the broccoli and potatoes were soft.

Transfer everything to a blender and blend until it is a smooth consistency.

I made enough to last for three days (for two). Servings will depend on how much or little you add.
