This recipe was inspired from Raw. Vegan. Not Gross. I was flipping through the book looking for lunch inspiration and came across a recipe for Avocado Grapefruit Bowls.
I didn’t have the exact items as the recipe in the book (except for the avocados) so I improvised.
Avocado Fruit Bowls
1/2 cup watermelon, finely chopped
1/2 cup cucumber, finely chopped
1/2 tomato, finely chopped1 tablespoon Tamari Soy Sauce
1 teaspoon ginger powder (you can also use fresh ginger)
Cut avocado in half and remove the pit (you can also slightly hollow out the avocado to make more space for the mix). Mix together the soy sauce and ginger powder (If you are using fresh ginger place the soy sauce and ginger in a blender or food processor). Once mixed together, add the watermelon, cucumber, and tomato. Toss together until coated. Add the mix to the avocado boils. Garnish with basil (or mint).
