Browned Butter Whole Wheat Sugar Cookies

Right now we are experiencing bad weather and it has been highly suggested to stay home. Fortunately we didn’t lose any power at our house. Unfortunately, Cabin Fever is kicking in. I  have been trying to keep myself busy: knitting, reading, baking. I wanted some cookies and instead of picking up a pre-made mixture at the grocery store (for the couple of hours I escaped yesterday), I decided to make my own. As I mentioned before, I prefer to make my own (food and desserts). Knowing what’s in my food makes it more enjoyable. But, this time I am being a little bad by adding some Reese’s Pieces and Milky Way. #balance

Ingredients

2 cups whole wheat flour

1 cup organic coconut palm sugar

14 tbsp browned butter

1 large egg

1 egg yolk

1/2 tsp baking soda

1/4 tsp baking powder

1/4 tsp salt

1/4 vanilla

 

Preheat oven to 350. First, brown your butter. Once the butter is finished, set it aside to cool and prepare your other ingredients. Mix together the flour, baking soda, baking powder, and salt. Set aside. Blend together the butter and eggs. Next add the vanilla and sugar. Then add the flour mix. At this point you can bake the cookies as-is, dip them in a sugar-cinnamon mix (for Snickerdoodles),  sprinkles, or anything else you want!

Roll the dough into 1 inch balls and place them on a baking sheet about 2 inches apart. Bake for 8-10 minutes. Place on a cooling rack. Enjoy!
