Nom Nom Nom: Pumpkin Muffins

Yesterday I mentioned I made some yummy pumpkin muffins this past weekend. I asked my co-worker if she would mind if I shared the recipe and she told me to feel free to share it with anyone. So, here it is:

Pumpkin Muffins (not sure of exact serving, it made 18 for me but I overfilled)

1/3 cup of vegetable oil (I used olive oil)
1 egg beaten
2/3 cup pumpkin ( I used the whole can. She said to make sure to get the kind that doesn?t have all the extra seasoning added since you will be adding it yourself)
1/4 cup milk
1 cup flour (I used unbleached)
1 cup sugar
3/4 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. nutmeg
1/4 tsp. ginger
1 cup chocolate chips (optional but totally yummy!)

Pre-heat oven to 350 degrees. Sift dry ingredients together then set aside. Mix all wet ingredients together. Add dry and mix ingredients until moistened all the way through. Add chocolate chips (optional). Fill muffin pan about 2/3. Bake for 25 minutes or until golden brown. Then devour and devour and devour!!

    I am NO DORK!!! By the way, I would LOVE to see you! We gotta figure something out! Also, how many calories are in these "nom nom" muffins? By the way, I could totally hear you making that noise!!!
